As my two fermenters are a bit away from the spark 4
is it possible or better to run one cable to the fermenters and use it for 2 sensors ?
as i understand in the spark they are anyway running into one port ?

Yes, this can be done. We also sell the hardware for it: BrewPi OneWire SSR expansion board.
Total cable length is still a limiting factor for OneWire sensors. From ~10m and up, the risk and frequency of connection problems and interference increases.
